"I love food. I like shopping for it, preparing it, serving it, and eating it. I love to bake, and my oven is always on. While I try to eat healthy, to be honest, I didn't even know what a carbohydrate was until about two years ago."
8:00 10:00 A.M. My schedule is different every day, but I usually like to be up around 8:00 or 9:00. For breakfast I have Quaker oatmeal made with equal amounts of water and whole milk and some local honey on top. I have a juicer, and if I don't feel like oatmeal, I'll make a juice from apples, carrots, ginger, lemon, celery, and cucumber. I usually drink water or hot water with lemon. Once a week I might have a cup of PG Tips black or green tea.
11:00 A.M. I have a small baking business and sell cupcakes at Joe, a coffee shop in Greenwich Village in New York. If I make them at night, the amount of cupcakes I end up delivering the next morning is shifty, because I've eaten most of them. I make them about three mornings a week and usually have one.
12:00 P.M. I have a banana or an apple between breakfast and lunch.
1:00 4:00 P.M. For lunch I make myself a sandwich, either peanut butter and jelly or boiled chicken with lettuce, tomato, and Duke's Mayonnaise on Matthew's All Natural 9 Grain & Nut bread. Sometimes I make a Greek white-bean or lentil soup and have that instead.
6:00 P.M. I take a private Pilates lesson for an hour twice a week at Clay gym. Two other days a week, I get on the treadmill and walk uphill for 30 minutes. I feel better about myself when I exercise. It seems to fix everything. I don't always work out at the same time, but I seem to have more energy for it at night.
8:00 P.M. Dinner changes week to week, though I very seldom order in or go out to eat. I live alone but cook for two, because I like having leftovers around to snack on at night. I'll make tilapia a couple times a week with spinach. I also eat boiled or baked chicken once or twice a week with a sweet potato and steamed green beans. Occasionally I fry up a steak and have it with a baked potato or boil spaghetti and toss it with butter, salt, and pepper. I use my broiler a lot and don't own a microwave. I have one drink a week at the most. I always have a salad with dinner. My mom made us one every night growing up.
10:30 P.M. I usually get hungry again a couple of hours after dinner. I'll have some red cherries, red grapes, seedless watermelon, cantaloupe, strawberries, blueberries, or Total Greek yogurt with honey. Another favorite snack is Newman's Own popcorn popped in olive oil. I also love ice cream. If I get a craving for something, I do not stop eating.
2:00 A.M. Nordic Naturals fish-oil supplement and a glass of water before bedtime.
